Barbecue Chicken Salad

I am the biggest fan of BBQ Chicken pizza, but sometimes I feel so heavy and gross after I eat it, so I thought to myself… why not turn it into a salad? 🙂 So that’s exactly what I did, and I think I have a new favorite lunch! 🙂

  • 6 cups romaine lettuce
  • 3-4 Boneless, skinless, chicken breasts, cooked and shredded
  • 1/2 red onion, diced
  • 1/2 cup mozzarella cheese, shredded
  • 1 avocado, diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15.25 ounce) can corn, drained
  • 1 cup barbecue sauce
  • 1/3 cup ranch for dressing


  1. In a large bowl add lettuce, chicken, red onion, mozzarella cheese, avocado, black beans, and corn.
  2. Drizzle the ranch dressing and barbecue sauce over the salad and stir until the dressing is fully incorporated and mixed in. (you can also but a little on top for looks and extra flavor).
  3. Keep refrigerated until ready to serve.
