Balsamic Bruschetta

This balsamic bruschetta is one of my FAVORITE appetizers. It was featured in this year’s “Day after Thanksgiving” Costco cookbook. With the fresh basil, tomatoes, onions, and the balsamic vinegar – it is absolutely delicious!

  • 1 baguette sliced 1?2" to 3?4" thick
  • 2 tablespoons butter, melted
  • 1?4 teaspoon garlic powder
  • 8 Roma tomatoes, seeded and chopped
  • 1/3 cup chopped fresh basil
  • 1?2 cup Parmesan cheese
  • 1 clove garlic, minced
  • 1?4 cup sweet onion, finely diced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon extra virgin olive oil
  • Salt and pepper, to taste


  1. Preheat oven to 350°F.
  2. Line a baking sheet with foil and arrange baguette slices on the sheet.
  3. Stir together butter and garlic powder. Lightly brush garlic butter over baguette slices. Bake 10 minutes, or until edges are golden.
  4. In a medium bowl, mix together tomatoes, basil, Parmesan, garlic and onion.
  5. Toss with balsamic vinegar and olive oil, adding salt and pepper to taste.
  6. Serve immediately with baguette slices.

While I can appreciate the need to block anyone from copying and pasting your recipes, I usually do this because I prefer a photo of the recipe I am saving vs just printing your recipes because you do not include photos of your recipes for print. Please consider adding a photo to the print option of your recipes. I am much more inclined to try a recipe that has a photo with it. If the printed version doesn't include that photo, I will forget what the recipe looks like and probably move on to another that has a photo with it. I know the recipes from Six Sisters Stuff that I save has all but stopped since I can no longer get a photo to include with the recipe.
