Baked Potato Casserole

There is nothing more comforting than a warm casserole at the end of the day! This Baked Potato Casserole is the definition of delicious comfort food, and is such a great twist on one of our favorite family dinners, baked potatoes!

  • 3 medium russet potatoes
  • 1 pound boneless chicken breasts (diced)
  • 5 slices of bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 3 green onions sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup heavy whipping cream


  1. Heat oven to 350 degrees.
  2. In a greased 9x9 pan, place half of your chopped potatoes.
  3. Over the potatoes, spread out the diced chicken.
  4. Sprinkle 1/4 teaspoon of salt, 1/4 teaspoon of pepper, half the bacon, half the cheese, and half the green onions over the chicken.
  5. Place the rest of the potatoes on top of the chicken, and top with remaining salt and pepper, bacon, green onions, and cheese.
  6. Pour heavy whipping cream evenly over the casserole.
  7. Cover with foil and bake for 1 hour. Uncover after 1 hour and bake 30 more minutes.
  8. We like to top ours with more cheese, or any of our other favorite baked potato toppings!
