Avocado Pasta

My favorite food is, and always has been, Avocados. You can eat them with everything, and trust me when I say I definitely do! I stumbled across some Avocado Pasta on Pinterest and knew I had to try it! I modified it to include all my favorite foods- tomatoes, Parmesan cheese, and of course I added an extra avocado. 😉 Avocado lovers, you are in for a treat!

  • 12 ounces cooked pasta (I used spaghetti, any other kind would work!)
  • 2 avocados
  • 1/3 cup fresh basil leaves
  • 2 cloves garlic
  • 2 Tablespoons lemon juice
  • 1/4 cup olive oil
  • 1 cup cherry tomatoes
  • 1 cup Parmesan cheese
  • Salt and pepper to taste


  1. In a food processor, blend together avocados (halved and seeded), basil leaves, garlic, lemon juice, and olive oil. Blend until avocado is smooth. Pour avocado mixture into bowl with pasta and stir until pasta and is completely covered. Mix in halved cherry tomatoes. Serve immediately, top with salt and pepper and Parmesan cheese.
