This Au Gratin Cheesy Potato Bake is simple, delicious, and full of flavor. If you are looking for a simple and delicious side dish, this is the recipe for you.

I have a hard time with side dishes lately. I feel like I am too lazy to make a side dish (or a few side dishes) after I just prepared a main dish, that the last thing I want to do, is make another recipe.

My husband wanted mashed potatoes, but that just sounded like a lot of extra work for me, so I decided to be a little creative with my potatoes and make a delicious dish, covered in a light cheese sauce of course.

Well it was no surprise, my husband loved these potatoes. They were also pretty quick to make. They came together in just minutes and they baked while my husband grilled the steaks.

Here is how to make them:

  • Step 1: Pick your potatoes.

For this recipe, I used just regular russet potatoes. However, you could use some sweet potatoes, red potatoes, potato fingerlings, etc.

To prepare them, I rinsed and peeled them with my potato peeler. You don’t have to peel them, but I don’t love the texture of the skin.

  • Step 2: Place them in prepared pan.

I sprayed my pan with non stick cooking spray, then laid them out. I also cut my potatoes pretty thin so they would cook faster and each potato slice would have more cheese on it.

  • Step 3: Make the sauce.

This sauce is super easy to make. All it is, is plain Greek yogurt, butter, cheddar cheese, milk, and some seasoning. It’s a very light sauce, and all you have to do is melt it together in the pan.

I continually stirred it with a whisk to be sure it was the desired texture, and didn’t lump up, or burn.

  • Step 4: Pour the Sauce over the potatoes.

Next I poured the sauce over the potatoes and added some salt and pepper. You can also add a little extra cheddar cheese to sprinkle on top, if desired.

  • Step 5: Bake and Serve

Then it’s all ready to go. Throw it in the oven and bake it for about 20-25 minutes at 350 degrees.

After it came out of the oven I topped it with some dried chives, and it was delicious.

  • Step 6: Remove from oven and top with dried chives if desired.

We also recommend eating immediately. This is best served warm and fresh out of the oven.

  • 4 russet potatoes
  • 1/2 cup plain Greek yogurt
  • 1/4 cup butter
  • 2 1/2 cups shredded cheddar cheese (divided)
  • 1/2 cup milk
  • salt and pepper, to taste
  • 1 Tablespoon dry chives - optional garnish


  1. Preheat oven to 350 degrees F.
  2. Wash and peel your russet potatoes and cut them into thin slices.
  3. Lay them in a 9 x 9 inch pan, that has been sprayed with non stick cooking spray.
  4. Prepare the sauce, by combining the plain Greek yogurt, butter, 2 cups cheddar cheese, and milk in a pan, over medium heat. Stir continually until smooth.
  5. Pour the sauce over the potatoes, and garnish with salt, pepper, and extra cheese.
  6. Place in the oven and bake for 20-25 minutes, or until the potatoes are soft.
  7. Remove from oven and garnish with dried chives, if desired.
  8. Serve immediately.

  1. I love this recipe but it doesn't cook in 25 minutes. I did an hour and the potatoes still weren't done. I used sour cream instead of yogurt. Next time I will only use 2T butter instead of 4, use the sour cream again, and cover the dish with foil when baking, taking the foil off for the last 10 minutes or so.
