Almond Butter Granola

This Almond Butter Granola, is the BEST homemade granola I have ever tasted. It healthy, guiltless, simple, and delicious. You can put this Almond Butter Granola, on just about anything. It's the perfect snack, breakfast, or topping. You'll love it.

I have always loved our honey granola, but lately we have been on a MAJOR almond butter kick.

I decided to switch it up and make it with almond butter, and I added in some coconut chips and chopped almond.

The good news is, it turned out great. The bad news is, I can’t stop eating it. It tastes great in a yogurt bowl (pictured below), paired with almond milk, or just eaten plain with a spoon.

I love this as a snack. I will put it in my kids school lunches, or send them out the door, on busy mornings.

Whether it’s eaten as a snack, breakfast, topping off a desert, or pairing with yogurt, you are going to love the sweet and crunchy flavor or this granola. It is definitely a must try.

what could i put this granola on?

I am a granola fanatic. I pretty much put this granola on just about anything but here are a few of my favorite things to put it on.

-Yogurt. I love the combination of smooth and crunchy. I am a texture person, and I think it just goes so well together. You have to try our Greek Yogurt Honey Breakfast Bowl, with this granola. It is the best.

-Coffee Cake. Have you ever tried putting granola on your coffee cake? Well you need to. Especially this Almond Butter Granola. Try our Cinnamon Streusel Coffee Cake.

-Smoothies. I love a good smoothie bowl. I am not much of an acai fan, but I love smoothies with granola on them. This granola tastes amazing with our Peach Smoothie Bowl.

how to make homemade granola

I’ll be honest, granola has always intimidated me. I am all about simple recipes, and for some reason, granola just seemed hard.

Well I’m hear to tell you, (from the worlds most lazy cook), making granola is so simple.

Here is how it’s done:

Step 1: Preheat oven to 325 degrees.

Temperature will of course vary from recipe to recipe, but this particular one, is at 325.

Step 2: In a medium bowl, mix together oats, almonds, coconut chips, salt and cinnamon and set aside.

If you have other granola favorites, feel free to add them. I like to add dehydrated or freeze dried apples to mine as well. I also am a big craisin/raisin fan, so I add those as well sometimes.

Step 3: In a saucepan over medium heat, mix together almond butter, coconut oil, and honey until smooth. Remove from heat and add vanilla.

This step is best used with a nonstick pan. Be sure you are continuously stirring the mixture, so it doesn’t burn or stick to the bottom.

Step 4: Pour almond butter mixture over dry ingredients, and stir until completely combined. Spread granola over a lightly greased baking sheet.

I usually use an olive oil spray for this, but you could easily use a butter based spray, or coconut oil.

Step 5: Bake for 18-20 minutes (stirring once halfway through cooking), until coconut is toasted and granola starts to brown.

When stirring, you can also flip granola. Just make sure that all the granola is getting evenly cooked.

If there are areas of the pan that show some burning, move them to an area that isn’t cooking as well. Usually the outside edges tend to burn the quickest.

Step 6: Remove from oven and let cool. Transfer to a mixing bowl or storage container (will keep fresh for 1-2 weeks).

how should i store homemade granola

Storing granola is simple, and it lasts for about 2 weeks.

I usually put mine in an airtight container, but you could also put it in a ziplock bag.

Sometimes for holiday, I will make this for neighbors, and put it in a plastic bag, with ribbon around it.

Just as long as it doesn’t have a lot of open air, or is being exposed, it should stay fresh for about 2 weeks.
