  • 1 package (8) burrito size flour tortillas
  • 2 (16oz) cans refried beans
  • 2 cups cheese
  • 1 cup light sour cream
  • 1 head green leaf lettuce, chopped
  • 1 (6oz) can medium black olives, sliced
  • 2 tomatoes, diced
  • 1 cup guacamole

  1. Place refried beans in a bowl and heat them in the microwave, stirring occasionally, until hot.
  2. Spread a layer of beans on the tortilla. Then add a layer of guacamole, tomatoes, cheese, sour cream, chopped lettuce, and sliced olives. Fold burrito up, cut in half and enjoy!

Serving little kids? Try wrapping them up in foil to hold them all together. Then as they eat have them slowly roll the foil down.

Homemade tortillas take a lot of time to make. I like to heat my store bought tortillas on a griddle before putting my burrito together.

  1. I love homemade burritos, but I wrap mine in wax paper, not liking how foil tears off so easily and I can get it in my mouth. I'm sure it's just me, though I did the same thing for my son when he was a little guy--wax paper, that is. Love how simple, yet so delicious, a meal of burritos can be, and this one is super easy (but I "cheat" in that I buy pico de gallo from my favorite grocery store and use it in place of cutting up tomatoes).
