Sheet Pan Meatloaf and Green Beans

My husband has never been a fan of meatloaf, but it is one of my favorite dinners!  My Grandma makes the best meatloaf (you can find her recipe here) and I was always begging my mom to make it!  I made a few minor adjustments to my Grandma’s recipe and adapted it to be made in a sheet pan!

I’m all about making life easier, so that means the less dishes I have to do the better!  I love that this recipes is a main dish and side dish all in one!

The other thing I love about this recipe, is that meatloaf typically takes over an hour to cook, but this recipe can be cooked in 30 minutes flat!  This is the perfect meal for those busy weeknights!

Ingredients

  • 1 1/2 pounds lean ground beef
  • 2 eggs
  • 1 onion, diced
  • 1/4 cup ketchup
  • Salt and pepper, to taste
  • 1 cup quick whole grain oats
  • 1/2 cup Italian bread crumbs
  • 1 (10.75 ounce) can condensed tomato soup
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons brown sugar
  • 1 Tablespoon olive oil
  • 1 pound fresh green beans

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl, combine ground beef, eggs, onion, ketchup, salt and pepper, oats, bread crumbs, and half the can of soup.
  3. Spray a baking sheet with nonstick cooking spray.
  4. Form meatloaf mixture into 12 patties and place on baking sheet.
  5. In a small mixing bowl, whisk together remaining soup, Worcestershire sauce and brown sugar.
  6. Spoon some of the soup mixture on top of each meatloaf patty.
  7. Toss green beans in olive oil until evenly coated and spread out on baking sheet between meatloaf.
  8. Bake for 25-30 minutes, or until meatloaf is cooked through and green beans are soft.
